[RECIPE!] Vegan Gingerbread Donuts + Ginger Maple Glaze
Even though I’m not Vegan I enjoy tackling new recipes. I'm on a journey to bake Vegan versions of my favorite desserts and candies. For my first cooking experience on YouTube, I tackled my beloved donuts. Watch the video below to learn how to make Vegan Gingerbread Donuts with Ginger Maple Glaze.
Vegan Gingerbread Donuts + Ginger Maple Glaze
Notes: this recipe makes about 12 baked donuts, and it only takes about 30 minutes in total to throw together.
Donut Ingredients:
1 cup sugar
1 ¾ cup flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
½ tsp ground ginger
¼ tsp ground nutmeg
¼ tsp ground cloves
Pinch of all spice
¼ tsp salt
1/4 cup oil - (I used coconut)
1 tbsp vinegar (I used apple cider)
1 tsp vanilla
1 cup lukewarm non-dairy milk or water (I used almond milk)
Preheat the oven to 375 degrees and oil the donut pans with vegan butter, oil, or spray. I use coconut oil or vegan butter.
In a large bowl mix together the dry ingredients - flour, baking soda, baking powder, spices, and salt).
In a medium bowl slowly whisk together the wet ingredients sugar, milk, vanilla and oil.
Create a large well in the dry ingredients, then slowly pour the wet ingredients into it. Whisk until well combined.
Fill a pastry bag or plastic ziplock bag {cut the end} with the batter and distribute it evenly into the donut pans. You can also just scoop the batter into each donut hole. Til each is about 2/3 full. Makes it easier if you place the bag inside a tall cup when placing batter into it. Bake for 10-13 minutes, remove from the oven. Let sit in tray for 5 minutes then pop the donuts out of the pan and let cool on a rack.
Ginger Maple Glaze Ingredients:
1 cup powdered sugar
2 tbsp maple syrup
¼ tsp ground ginger
1-2 tbsp water or milk (I used almond milk)
In a small bowl. Mix together powdered sugar, maple syrup and ginger. Add milk one tsp at a time until desired consistency.
Once donuts are cooled, dip each one into the glaze. Set on wire rack and repeat until all donuts are complete.
